Gluten-Free Breakfast Burritos

Quick and easy recipe that's sure to leave your taste buds wanting more.

White corn tortillas can be substituted for those that have no corn allergies. Although, I prefer the fluffy texture of the tortilla wraps made in this recipe.

One popular trend, as of late, is going Gluten Free (GF). Although, not everyone needs to there are those that can‘t have gluten at all. That’s where my expertise comes in as I have Hashimoto’s Thyroiditis and Celiac Disease. These particular ailments restrict my diet from including any gluten or milk. 5 years ago, when I started researching and making various GF recipes, I found out that it was really difficult to get things to taste decent. So I took the recipes I was using and made them my own by tweaking them to make them edible.

When cooking make sure to have fun and mix it up a bit with some of the ingredients you love that may not be in this recipe. Everyone has different foods we gravitate to, so make sure you're eating for your mind-body type.

You're probably asking, well how do I know what my mind-body type is? Glad you asked. I like to use Ayurvedic diet guidelines. Ayurveda is an eastern diet philosophy that has been around for centuries and helps not only your body but your mind as well. When eating for your mind-body type it helps heal your entire being from the inside out. Thus making food a natural medicine for your common ailments. The mind-body types are divided into three doshas. Doshas are the different constitutions that your body makes up. To find out more about the different doshas visit this blog here. You can figure out your dosha type by taking this quiz. After taking the quiz you'll be emailed a list of foods you should avoid to help with healing your mind and body.

 

Ingredients for GF Tortillas:

6 Large Eggs, beaten

1 cup Coconut Milk

1/2 cup arrowroot powder

1/3 cup coconut flour, sifted

2 Tbs melted ghee

pinch of sea salt

ghee, for the pan


1) Heat an 8 inch pan to medium-high heat.

2) Whisk together all ingredients and let batter sit for 10 minutes, then whisk again.

3) Melt a little bit of ghee into the pan and be sure it covers the bottom of the pan.

4) Scoop about 1/4 cup of batter into pan and use back of spoon to evenly distribute batter onto pan. Cook for 30 seconds, or until batter bubbles then flip and cook an additional 30 seconds.

5) Move tortilla wrap to a plate to cool. Grease between cooking tortilla wraps when needed.





Ingredients for Breakfast Burrito Egg Filling

2 Tbs ghee

1/2 cup diced red onion

1 small red bell pepper, seeded and diced

1 small yellow bell pepper, seeded and diced

1/2 tsp sea salt

1/4 tsp cracked black pepper

2 Tbsp coconut milk

12 Large eggs, beaten

Roasted Tomatillo Salsa

Guacamole


1) Melt 1 tablespoon ghee in deep skillet over medium-high heat.

2) Add onion, bell peppers, sea salt and pepper and sauté for about 5 minutes.

3) Meanwhile, in a bowl beat eggs and 2 tablespoons coconut milk.

4) Turn temperature down to medium-low heat.

5) When vegetables are tender, add beaten eggs into skillet and wait about 45 seconds until stirring.

6) Cook eggs all the way through until fluffy.

7) Add egg filling to tortillas and top with sliced avocado or guacamole.

8) Top with roasted tomatillo salsa if desired.

9) Enjoy! 😋


 

This is a quick and easy recipe that can also be wrapped in foil, put in a freezer bag and frozen for up to 2 months. Making it ahead of time will cut your time down in the morning and you can just pop it in the microwave or toaster oven before heading out to work.
